Chocolate Nomenclature

Confused about confections? Here are some definitions to clarify any murkiness that may exist.

Cacao – The raw material from which chocolate is made after fermentation and other processing of the cacao. It is the unprocessed bean, and or the whole fruit. It sometimes is used to describe the whole tree from which the fruit comes (the theobroma cacao tree) In this context, theobroma can literally mean “God’s food” and cacao can mean “chocolate”, even though theobroma cacao is often said by commentators to mean “Food of the Gods”.

Cocoa – Denotes the first and many subsequent stages of cacao processed into chocolate products.

Coca – The plant from which the drug cocaine is derived. Freud and Halstead were not snorting chocolate!

Pastille – also known as a troche, is a medicinal pill made of liquid chocolate that is allowed to harden. They are meant to be chewed slowly or allowed to dissolve gradually in the mouth.
